Jerk Paste Marinade / Sauce for Tacos - Working

This recipe is currently a guideline - It's very good, but I am still working on it. Once it's done, I'll move it into the Recipe section of the site.

Ingredients:

  • 1 Medium White Onion, Coarsely Chopped
  • 8 Green Onions Chopped
  • 2 Bunches Cillantro Chopped - About 2 Cups, Leaves and Stem
  • 6 Tablespoons Fresh Thyme Leaves
  • 3 Tablespoons Fresh Ginger, Chopped Coarsely
  • 1 Bulb of Garlic Cloves, Chopped Coarsely
  • 2 Tablespoons Cinnamon Powder
  • 1/2 teaspoon Clove Powder
  • 2 Tablespoons Allspice Coarsely Ground
  • 2 Tablespoons Whole Black Pepper Corns
  • 1/2 Tablespoons Corriander Seeds
  • 1/2 Teaspoon Cumin Seeds
  • 1 Tablespoon Freshly Grated Nutmeg
  • 1/4 Cup Packed Dark Brown Suger
  • 1 Cup Pineapple Syrup (48 Oz. Pineapple Juice Reduced Over Low Heat to 1 Cup)
  • 4 Oz. Guava Paste (Pasta de Guava)
  • 4 Tablespoons Soy sauce
  • 1/2 Cup Coconut Oil
  • 1 Tablespoon Sesame Oil
  • 1 cup Fresh Pineapple Chopped
  • 5 or more Scotch Bonnet Pepper (Seeded) (adjust to taste)

Preparation:

In a food processor combine all the ingredients. Adjust for taste and heat level with more or less spice. Refrigerate and use when ready.

I served the resulting tacos with a Pickapeppa aioli - which worked exceptionally well.
